normandy. on return to the uk, chris remained in the top end restaurant sector and in 1993 joined the compass group as a director’s chef at their headquarters in queens wharf. chris’s career quickly flourished to launching and managing compass’s most prestigious roux fine dining restaurant whilst also working in la gavroche. chris set up his own successful coffee bar business in 1998 with a holroydhowe co-ordinated the catering offering at a large portfolio of independent schools. more latterly sue has been a project manager with holroydhowe looking after the catering at eastbourne
